Description: Cupped oysters coming from beds of sea, are selected for balanced quality of its fine flesh.  Sorted then refined in "Claires" where seawater renews itself of course.

Oysters reside at the rate of : 
14 days from April till October with density 1 kilo per m²
28 days from November till March with density 3 kilos per m²

Flesh rate is 7 per cent. Oyster take a light taste of land. its flesh is fine and light.
