Description: Livarot is the oldest cheese in Normandy. It has a shiny, sandy, orange-red rind, ringed with strips of reed. The light yellow paste, pierced with small holes, reveals a powerful bouquet that lingers on the palate for a long time. The colonel has character! Made less than 10 kilometres from the town that bears its name in Lower Normandy. In the last century, Livarot was the most popular cheese in Normandy. Today, Camembert has largely supplanted it. Also known as Colonel because of its reed belt, reminiscent of the officer's bars. Originally, to prevent the Livarot cheese from collapsing during maturing, these strips were made from sedges, marsh reeds, which were bundled and then dried.
