Description: The smoked trout eggs come from the Oncorhynchus Mykiss species, from fish originating in France. They are smaller in size and crunchier in texture than salmon roe. The eggs are harvested fresh before being salted and smoked in our workshop in Neuvic. Delicate know-how to preserve the delicate flavor of trout eggs. Softer than salmon eggs, trout eggs have a crunchy texture and offer an explosion in the mouth revealing the iodized notes characteristic of this species.
